In contrast to traditional recipes, these organic rice cakes are made by "puffing" which is similar to making popcorn. The rice grains burst because of the pressure of two waffle moulds. The starch emerges and "sticks" the rice grains together creating a round, even rice waffle. Through this short baking process, the nutrients are released making them easier to digest. It also gives the rice waffle its typical roasted taste.
